Sweet Summer Salad
Salads are always great during those summer months where it's too hot to eat anything cooked. I for one am a huge salad fan, and am a firm believer that if you don't like salad, you just haven't ever had a good one! This one combines a ton of different flavors that not only taste delicious, but are good for you too!
Sweet Summer Salad
What You Need:
- Mixed Greens - I like Nature's Promise Organic Baby Spinach & Spring Mix which can be found at your local grocery store. You can also go to your local farmer's market and pick up a few different lettuces, or they may have a bag of mixed greens already.
- Salad Dressing - I enjoy Annie's Organic Salad Dressings, particularly Roasted Garlic Vinagrette and the Goddess Dressing.
- Half an Avocado - You can also do just a 1/4 to save on calories.
- Handful of Almonds - Or your favorite nut.
- 1/4 Cup Dried Cranberries
- 1/4 Cup Feta Cheese - Crumbled Goat cheese is also good.
- 1/3 Cup Chickpeas
I also like to add shredded carrots, quinoa, egg, sliced cucumber, sliced strawberries or apples, whatever! Pick toppings that you enjoy: Lots of veggies, a little dried fruit, a handful of nuts and/or cheese, your favorite lentils, and even fruit.
Directions:
- Rinse greens in cold water and place in a large bowl.
- Dice avocado and add on top of greens.
- Add the rest of your toppings.
- Drizzle with dressing to finish. For health benefits, less is more!
