Sweet Summer Salad

Salads are always great during those summer months where it's too hot to eat anything cooked. I for one am a huge salad fan, and am a firm believer that if you don't like salad, you just haven't ever had a good one! This one combines a ton of different flavors that not only taste delicious, but are good for you too!

Sweet Summer Salad

What You Need:

  • Mixed Greens - I like Nature's Promise Organic Baby Spinach & Spring Mix which can be found at your local grocery store. You can also go to your local farmer's market and pick up a few different lettuces, or they may have a bag of mixed greens already.
  • Salad Dressing - I enjoy Annie's Organic Salad Dressings, particularly Roasted Garlic Vinagrette and the Goddess Dressing.
  • Half an Avocado - You can also do just a 1/4 to save on calories.
  • Handful of Almonds - Or your favorite nut.
  • 1/4 Cup Dried Cranberries
  • 1/4 Cup Feta Cheese - Crumbled Goat cheese is also good.
  • 1/3 Cup Chickpeas

I also like to add shredded carrots, quinoa, egg, sliced cucumber, sliced strawberries or apples, whatever! Pick toppings that you enjoy: Lots of veggies, a little dried fruit, a handful of nuts and/or cheese, your favorite lentils, and even fruit.

Directions:

  1. Rinse greens in cold water and place in a large bowl.
  2. Dice avocado and add on top of greens.
  3. Add the rest of your toppings.
  4. Drizzle with dressing to finish. For health benefits, less is more!

Enjoy!
