Vegan Banana Oatmeal Scones

These are not your average scones. First of all, they're soft and chewy instead of dry and crumbly. More like a giant cookie really, but healthy and one that you can top with butter and jam. Feel free to play around with different shapes and sizes. I think these would work well as little snack balls, or smaller scones, or even baked in a muffin tin.

These scones are fiber rich, vegan, and make the perfect breakfast or snack for those on the go. Keep them in the fridge if you decide to make a bigger batch, and warm them up when you're ready to eat! 

Vegan Banana Oatmeal Scones

This recipe makes 2 large scones. Calculate as needed for a bigger batch!

What You Need:

  • 2 cups Quick Oats (or 1 cup Oat Flour and 1 cup Quick Oats if you don't have a blender)
  • 1 Ripe Banana
  • 1 TBSP Coconut Oil
  • 2 TBSPS Coconut Sugar
  • 1 TBSP Chia Seeds
  • 1/8 cup Almond Milk (or Milk of your choice)
  • 2 TSPS Cinnamon
  • 1 TSP Baking Soda
  • Pinch of Salt
  • Blender


  1. Preheat oven to 450 degrees F.
  2. Blend 1 cup quick oats to make oat flour.
  3. Add salt, baking soda, unblended quick oats, cinnamon and coconut sugar to oat flour and stir until well mixed.
  4. Blend banana, coconut oil, chia seeds, and milk in blender until smooth.
  5. Slowly add wet to dry, mixing as you add wet, until a dough forms. 
  6. Make sure everything is well mixed together, then form scones with your hands and place on a baking sheet.
  7. Bake in oven for 10-12 minutes.
  8. Let cool for a few minutes before eating.

Top with whatever pleases you!
