Greek Eggs and Avocado on Toast

Ever since traveling abroad I can't get enough of open faced sandwiches. I started making variations of this dish for lunch the past few months and can say with certainty that I have an obsession. Today's version includes spinach, feta cheese, and hummus so I've dubbed it the Greek version of this yummy dish. Enjoy!

Greek Eggs and Avocado on Toast

What You Need:

  • Bread of your choice - I use Ezekial Sprouted Whole Grain Bread
  • 2 Eggs
  • 1 Tablepoon Extra Virgin Olive Oil
  • Hummus of your choice - I use Nature's Promise Organic Garlic Hummus.
  • Feta Cheese, crumbled
  • Fresh Spinach
  • Half an Avocado 


  1. Throw your bread in the toaster, set to however you like it.
  2. Pour olive oil in a frying pan on medium heat. Swirl oil around the pan until evenly coated.
  3. Crack eggs into pan and let cook for 1-2 minutes. Flip eggs sunny-side down and let cook for another minute.
  4. Once bread is toasted, spread on hummus to your liking.
  5. Add spinach on top of hummus.
  6. Add 1 egg to each slice of bread on top of spinach.
  7. Divide avocado into two quarters and slice 1 quarter over each slice of bread.
  8. Top with crumbled feta cheese to your liking.

To eat I suggest a sharp knife and fork. Cut each slice down the center to enjoy the yoke! Yum!
